Recipes

At Sams I recently bought a Taste of Home Cookbook. I am LOVING this cookbook. It is full of easy fast recipes for dinner time, and I am more likely to cook when I have fun stuff to look forward to cooking. I promised I would post one of the child friendly recipes I came across so here it is. Mitch gobbled this up and that is saying a lot these days.

Broccoli Beef Braids
1 pound grond beef
1/2 cup chopped onion
3 cups frozen chopped broccoli
1 c. part skim mozzarella cheese
1/2 c sour cream
1/4 tsp salt and pepper
2 tubes refrigerated crescent rolls

In a large skillet cook beef and onion. Add broccoli, cheese, sour cream, salt and pepper; heat through.
Unroll one tube of dough on greased baking dish, seal the seams and perforation, forming a 12 in x8 in rectangle. Spread half beef mixture lengthwise down the center. On the side, cut 1-in wide strips 3 in into center.
Starting on one end, fold alternating strips at an angle across filling. Seal ends.
Bake at 350 for 15-20 min or until golden Brown.

Parmesean Crusted Chicken with Creamy Risotto
This one took about 30 min to make.

2 Eggs
3/4 c plain dry bread crumbs
2 oz parmesean cheese, about 1/2 cup
1/2 tsp pepper
6 boneless skinless chicken breast
2 tbsp veg oil
1 can diced tomatoes
1 can condensed tomato soup
1 1/4 c 2% milk
1 md zucchini
1/2 med. onion
2 garlic cloves
3/4 tsp salt
1/4 tsp crushed red pepper
2 cups uncooked instant white rice
2 oz cream cheese softened

Beat eggs. Combine bread crumbs, 1/4 c of parm cheese and black pepper in second tray. Dip chicken into eggs, then into bread crumb mixture. Sprinkle chicken with any remaining bread crumb, and cook for 3-5 min or until no longer pink.

Drain liquid from Tomatoes into a bowl, add enough water to liquid to measure 1 cup. Add tomatoes, soup and milk to bowl; mix well. Slice zucchini into uqarters and chop the onion.

Remove chicken from skillet, keep warm. Combine Zucchini, onion, garlic, salt and pepper flakes in skillet. Cook and stir 1-3 min or until fragrant. Add rice and tomato mixture. Bring to simmer, cook 3 min. Cover, remove from heat and let stand 5 min. Add cream cheese and remaning parmesean cheese; stir until mixed. Top with Chicken.

I hope these are helpful, sometimes finding this inspiration is half the battle!

Yum! Thanks for sharing. We've been pretty lucky with Austin - right now he'll eat anything. :) But I've heard they can sometimes get pickier as they get older. Plus, these sound like good recipes for mama and daddy, too!

Yes, i loved the Rissoto recipe and the beef and broccoli was delicious!
